2 cups of flaked Goatsbridge Trout
3 cups of freshly mashed potatoes
4 chopped onions
3 large eggs
2 tablespoons of chicken stock
2 teaspoons of salt
1 teaspoon of white pepper
1 teaspoon of sugar
1 teaspoon of sesame oil
1 tablespoon of cooking wine
1 tablespoon of Worcestershire sauce
4 cream crackers finely crumbled
Mix all ingredients together thoroughly except the egg and crackers then shape into balls.
Dip in the egg and roll in finely crumbled crackers.
Deep fry until golden brown.
Drain and serve hot or cold.
