Smoked Goatsbridge Trout Fish Cakes
We’re finding the creativity of the food bloggers who’ve been sending us recipes that contain Goatsbridge trout really exciting and we’re enjoying being able to share their tried and tested fish dishes with you. This week Ciara of the gettingfedup.com blog has shared her smoked Goatsbridge trout fish cake recipe with us which we hope you’ll try.
Start with the fish cakes. Put the potatoes it a bowl and flake the fish in with 2 tablespoons of flour. Add the egg, coriander and season generously with salt and pepper. Add in the lime juice and then mash it all up really well.
Dust a plate with the remainder of the flour. Divide the mixture into twelve little balls and then shape those balls into heavenly little cakes.
To coat the fish cakes, you can either sprinkle over the sesame seeds, or toss them in a bowl with the seeds depending on how much coverage you prefer.
Leave the fish cakes to chill in the fridge for around 30 minutes, so that they firm up nicely and hold their shape when they are cooking.
To make the sauce, simply add all the ingredients to a saucepan over a low heat and stir gently for two minutes.
When you are ready to cook the dish, place a large frying pan over a medium heat. When the pan is hot, add the oil and the fish cakes. Cook for around 2 – 3 minutes on each side, so that the sesame seeds become nice and golden and the cake is heated fully through. (You will probably need to cook them in two batches.)
